The batch I made is for orange truffles, with marmalade and a little softened dried orange peel, and a little bit of orange oil because it had an *aftertaste* of orange, but no taste of it when you have it in your mouth, which was odd.
Anyway, the end result, flavourwise, is exciting; like Tobler Oranges were a decade ago, before they were bought by Terry's and turned into an american chocolate. Only more so. But the liquid of the marmalade and the hydrated dried peel seems to have made for a very soft ganache. Like, it has the texture of pudding. Not very rollable for truffles. So I melted another cup of chocolate, and stirred half of the ganache into it, and I hope that sets better. I don't have time to make filled chocolates today (ie, in a mold), but later I'll make shells in my chocolate molds, and then fill the chocolate shells with the soft ganache, and see how well that works for kicks.
to give an overview of my life. I was raised in smallmidwest town usa and
was your typical small town good girl. Well I gave off the appearance to
the grown ups that I was good but most of the guys who knew me knew the
truth that I was a fun time when you got me warmed up. Which happend quite

Like most liberals, I’m disappointed by all the compromises that the Democrats had to make to get their 60th Senate vote1 for health care reform. But make no mistake: even without single-payer, public option, or Medicare buy-in, this law is A Very Good Thing. Kevin Drum summarizes what we are getting:
- Insurers have to take all comers. They can’t turn you down for a preexisting condition or cut you off after you get sick.
- Community rating. Within a few broad classes, everyone gets charged the same amount for insurance.
- Individual mandate. (Remember how we all argued that this was a progressive feature back when John Edwards and Hillary Clinton were championing it during the primaries?)
- A significant expansion of Medicaid.
- Subsidies for low and middle income workers that keeps premium costs under 10% of income.
- Limits on ER charges to low-income uninsured emergency patients.
- Caps on out-of-pocket expenses.
- A broad range of cost-containment measures.
- A dedicated revenue stream to support all this.
The chief objection to the bill, among left-wingers who would rather blow the whole thing up than pass it, is that by requiring everyone to buy insurance and not having any publically sponsored competition to keep prices down, the bill represents a massive giveaway to the for-profit insurance industry. On the one hand, they are absolutely right. On the other hand, letting corporate interests skim off social-welfare programs has been standard operating procedure in American politics for decades, even before Ronaldus Magnus. Food stamps are a wonderful benefit to agribusiness. Federally guaranteed loans for both housing and college education are basically free money for banks. Programs like SBIR funnel government research grants to private firms with the explicit expectation that those firms will turn the research into profitable commercial products.
This is all basically legalized graft, but it does give these programs stakeholders with more political clout than, say, minimum-wage workers. And I don’t see how progressives can push the political system far enough to the left that cutting deals with Big Business becomes unnecessary. To do that, a President Obama wouldn’t be influential enough; we’d need a President Lenin.
1 They passed up a golden opportunity during the Bush years. When Republicans were clamoring for an “up-or-down vote” to get Bush’s Supreme Court nominees in, the Democrats should have doubled down and said, “let’s eliminate the filibuster for everything”.

But I think my favorite of his recordings is this excerpt from a 15th century letter, so it is said, from Fra Giovanni to a friend. I can hear his voice still, and the words are as fresh and sharp and comforting and pointed today as when I first heard it, decades ago. Merry Christmas, y'all.

The main course was, though I say it what shouldn't, spectacular. Each plate consisted of a bed of celeriac cooked with smoked bacon, white wine and rosemary, a layer of blanched spinach tossed with olive oil and rosemary, a couple of slices of crispy slow roast pork belly and two quarters of pear poached with sugar and cider vinegar. I am in love with this dish; rich, complex and utterly delicious.
We tried two wines with it, a 13th Street Gamay which had enough acidity to cope with the pork and great leather, spice and berry notes and, my preference, a Hochheimer Domdechaney Spätlese, which was a perfect example of why, in Germany, one gets served Rheingau Kabinetts and Spätleses with dishes that conventional Anglo-French wisdom would prescribe a red for. It was a wonderful match. Sometime soon I may recover enough to essay some cheese.
I roasted the pork on a bed of carrots and celery. I also threw in the bones I'd detached from the pork which had a reasonable amount of meat around them. OMG! Delicious.

I can't really think of words. I'm sad. It feels like every month someone else I love dies, which I guess is just how things are when one loves so many people.
